Hyderabad: Idli is a favorite breakfast for South Indian food lovers. But if you are bored of everyday ordinary idli, then this ‘Thatte Idli’ recipe is for you. The most important thing is that to make it, you do not have to wait for hours for the batter to ferment. This instant idli, which is prepared in just a few minutes, becomes very soft and spongy.

To make instant thatte idli, take idli podi with 1 cup soaked rice, 1/3 cup soaked poha, ½ cup curd, ¼ tsp eno, some water, salt as per taste and ghee for garnishing and you can add some water to adjust the consistency.

Method of preparation
First prepare the batter, add soaked rice, soaked poha and curd in the mixer jar, then add salt as per taste and some water and grind all these things finely. The batter should have the consistency of a thick but flowy batter. Add more water if needed. Now add fruit salt (Eno) to this batter and mix well with light hands. Your instant idli batter is ready, do not keep it for fermentation.

Steam Idli
Spread butter paper in the bottom of a deep bowl or idli mold or apply a little oil/ghee. With this the idli will come out easily. Pour the batter in this bowl and then heat water in a big pan or cooker. Place a high stand in the water and place the idli bowl on it. Keep in mind that the bottom of the bowl should not touch the water directly. Close the pan tightly with a lid and let the idli steam well on medium flame for 15-20 minutes.

Once the idli is cooked, take out the bowl and let it cool. With the help of a knife, release the idli from the edges and take it out in a plate. Apply some ghee on the hot idli and serve with idli podi.
